Stuffed Baked Apples with a Bourbon Caramel Sauce
5-6 Large Apples (Crisp Pink)
1 ¼ cup French loaf Bread (shredded)
¼ cup Brown Sugar
1 cup Heavy Cream
½ tsp. Cinnamon
¼ tsp. Nutmeg
¼ cup Walnuts (chopped)
¼ cup Dried Cranberries or Raisins
Preheat grill at indirect heat to 375 – 400 F.
Hollow out the apples allowing ¼ inch sides.
Combine eggs, heavy cream, sugar, cinnamon, and nutmeg and mix.
In a medium mixing bowl, combine the bread and the egg mixture and mix well.
Add all of the other ingredients and mix.
Fill apples with the bread mixture.
Bake for 25 – 30 minutes, or until a knife comes out clean when inserted into the middle.
Top with Bourbon Caramel Sauce and Serve warm!
Bourbon Caramel Sauce:
In a small Dutch oven, combine 2 tbsp. of butter and 1 cup of brown sugar.
Place it on a 400 F
Grill and allow to melt stirring occasionally.
Once the butter and sugar is melted together, carefully add ¼ cup of Bourbon. Once it flamed up, add ¼ cup of Heavy Cream. Allow the
mixture to come to a boil and then cook for 1-2 minute while stirring.
Remove from the heat and set aside – sauce will thicken slightly. Serve warm with the apples!
