Spicy Chocolate Cake with Jalapeño Ganache and Tequila Cream Cheese



Cake Ingredients:
  • ¾ cup Unsalted Butter (room temperature)
  • 1 cup Light Brown Sugar
  • 1 cup Granulated Sugar
  • 3 Eggs
  • 2 ¼ cup All Purpose Flour
  • 2/4 cups Regular Cocoa Powder
  • ¼ cup Dark Cocoa Powder
  • 2 tsp. Baking Soda
  • ¼ tsp. Cayenne Pepper
  • Pinch of Salt
  • 2 cups Buttermilk
  • 1 tbsp. Rum Extract
Tequila Cream Cheese Ingredients:
  • 2 Sticks Butter
  • 8 oz. Cream Cheese
  • 2 lbs. Powdered Sugar (sifted)
  • ¼ cup Cocoa Powder (sifted)
  • 4 tbsp. Water
  • 3 tbsp. Tequila
Jalapeño Ganache Ingredients:
  • 16 oz. Semi-sweet Chocolate
  • ½ cup Heavy Cream
  • 2 Jalapeño Peppers
  • 1 tbsp. Unsalted Butter


Cake Method:
  1. Pre-heat the oven to 350F.
  2. Cream the butter and sugars together until smooth.
  3. Add the eggs one at a time and mix after each addition.
  4. Sift the flour, cocoa, baking soda, salt, and pepper together.
  5. Add the dry mix alternately with the buttermilk and mix after each addition.
  6. Add Extract and beat for 1 minute or until incorporated.
  7. Pour into a well-greased and lined 18 x 13” sheet pan.
  8. Bake for 23-28 minutes or until a toothpick comes out clean when inserted into the center of the cake.
  9. Cool completely.
Tequila Cream Cheese
  1. Cream the butter and cream cheese together until smooth.
  2. Add the rest of the ingredients and beat for 2 minutes or until smooth.
Jalapeño Ganache
  1. Place chocolate in a medium bowl.
  2. Slice open the peppers, and remove the seeds.
  3. Pour the cream into a small saucepan, add the peppers and place over medium heat.
  4. Stirring continuously, heat the cream until right before it comes to a boil.
  5. Strain the cream into the chocolate and add the butter.
  6. Stir vigorously until all of the chocolate is dissolved and smooth.
Assemble Cake:
  1. With a round cookie cutter, cut circles of cake out
  2. Place one circle of cake and then pipe ganache onto it.
  3. Place another circle of cake and then pipe a ring of ganache and then top it with the tequila cream cheese icing. Enjoy!
