Ingredients

Marinade Ingredients

  • 2 Mangoes (peeled and chopped)
  • 1 Onion (chopped)
  • 3 Cloves Garlic
  • ½ cup White Wine Vinegar
  • 1/4 cup + 2 tbsp. Brown Sugar
  • ¼ cup Soy Sauce
  • 2 tbsp. Olive Oil
  • 1 ½ tsp. Salt
  • ½ tsp. Black Pepper
  • 1 tbsp. Chili Powder
  • ½ tsp. Cayenne Pepper
  • ¼ tsp. Cumin
Kabob Ingredients:
  • 3 cups Country Style Ribs (Pork)
  • 2 cups Pineapple
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • ½ Red Onion
  • Beverage Ingredients:
  • 1 cup cucumber (peeled, seeded)
  • 1 cup diced honeydew
  • 1 tsp. Fresh Thyme (chopped)
Beverage Ingredients:
  • 1 cup cucumber (peeled, seeded)
    1 cup diced honeydew
    1 tsp. Fresh Thyme (chopped)
    2 oz. Flavored Vodka (watermelon)
    ½ cup Prosecco
    Cucumber for garnish
    Thyme for garnish

Directions

Marinade:

  1. Place all ingredients in a blender or food processor and blend until smooth.

Marinade kabobs.

  1. Preheat mini Big Green Egg to 450 F.
  2. Soak wooden skewers in water for 20 minutes.
  3. Chop all ingredients into 1″ cubes.
  4. Skewer layering all of the ingredients.
  5. Pour Marinade over kabobs. Marinade for 2 hours or overnight in the refrigerator.
  6. Grill kabobs basting while grilling for 15-20 minutes or until the pork is thoroughly cooked (160-165 F).
Beverage:
  1. In a blender, blend thyme, cucumber, and honeydew.
  2. Strain into glasses and then add vodka.
  3. Top off with Prosecco.
