Grilled Shrimp and Corn Salad

Ingredients

  • Grilled Shrimp and Corn Salad
  • Ingredients:
  • 2 lbs. Shrimp
  • 4 ears of Corn
  • 1 Jalapeño
  • 1 Green Bell Pepper
  • 1 small container Cherry Tomatoes
  • 1 bunch Cilantro
  • Olive Oil
  • Spice rub
  • Salt and Pepper

Directions

 

  1. Preheat grill to 450 – 500 F.
  2. Toss Corn in olive oil and spice rub. Grill for approx. 10 minutes or until slightly charred. Set aside.
  3. Marinade Shrimp in olive oil and spice rub for 20 minutes.
  4. Skewer Shrimp, then grill for approx. 10 minutes or until shrimp is thoroughly cooked.
  5. Remove kernels from Corn.
  6. Remove seeds from jalapeño and dice into small pieces. Do the same with the Bell Pepper.
  7. Half the cherry tomatoes.
  8. Once the shrimp is cooked, toss all of the ingredients together with vinaigrette of your choice.
  9. Sprinkle generously with chopped Cilantro.
