Fresh Summer Caprese Salad



  • 1 cup Red Cherry Tomatoes
  • 1 cup Yellow Cherry Tomatoes
  • 1 cup Mozarella (diced in cubes)
  • Fresh Basil (chiffonade)
  • 1 Scallion (Green Onion) (chopped finely)
  • 3 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Balsamic Glaze
  • Pinch of Salt
  • Pinch of Ground Black Pepper
  • Extra Basil for Garnish


  1. Slice all of the tomatoes in half length wise
  2. Combine in a medium mixing bowl with the mozzarella basil and scallions and toss lightly.
  3. Add the rest of the ingredients and toss lightly.
  4. Garnish with Basil and serve cold.

*More or less olive oil can be used depending on taste.
