Cheese-Stuffed Meatballs

Linkie Marais' Cheese-Stuffed Meatballs



  • 1 lb. Ground Beef (85-90% lean)
  • 1 tbsp. Garlic (finely chopped)
  • 2 tbsp. Fresh Oregano (chopped)
  • 3 tbsp. Onion (minced)
  • 1 tbsp. Ketchup
  • 2 tsp. Worcestershire Sauce
  • 1 Egg Yolk
  • 2 tbsp. Bread Crumbs
  • ¼ tsp. Kosher Salt
  • ¼ tsp. Ground Black Pepper
  • ¼ cup White Cheddar Cheese (cut into ½ inch cubes)

BBQ Sauce:

  • ¾ cup Ketchup
  • 1 tbsp. Worcestershire Sauce
  • 2 tbsp. Red Wine Vinegar
  • 1 tsp. Mustard
  • 1 ½ tbsp. Honey
  • 1 tsp. Siracha Hot Sauce
  • 1 tsp. Paprika
  • ¼ tsp. Ground Black Pepper
  • 1 tbsp. Hot Mexican Style Chili Powder
  • ¼ tsp. Cumin



  1. Preheat the oven or grill indirectly to 400° F.
  2. In a medium bowl, combine all of the ingredients for the meatballs, except for the cheese, and mix well until all of the ingredients are incorporated.
  3. Using about a tablespoon of the meat mixture at a time, roll into balls and then slightly flatten the individual balls to place a cube of cheese in the middle of the flattened ball. Then reshape the ball to cover the cheese.
  4. Do this until the mixture is used up. Place meat balls into an oven-safe baking dish, and bake for 20 min.
  5. While the meat balls are baking, combine all of the ingredients for the BBQ sauce in a small mixing bowl. Once the meatballs have been baked, pour the sauce over them and bake for an additional 10 min.
  6. Remove from the oven, and serve warm!
