Blueberry Cream Cheese Pie
1 Graham Cracker Pie Shell
8 0z Cream Cheese
¾ cup Powdered Sugar
1 container Cool Whip
Ingredients for blueberry topping:
3 cups Fresh Blueberries
1/2 cup Brown Sugar
3/4 cup Water
2 tbsp. Cornstarch mixed with ¼ cup water
Zest of 1 Lime
1 tsp. Orange Extract
1 tsp. Cinnamon
Method for Topping:
Combine all of the ingredients into a medium saucepan and cook
for 10-15 minutes or until the mixture thickens.
Method for the Pie:
Beat the cream cheese and powdered sugar together until smooth.
Add half of the cool whip and beat until smooth.
Using a spatula, fold in the rest of the cool whip.
Pour mixture into the pie shell and top with the cooled blueberry
Refrigerate for 2 hours or overnight. Garnish with fresh fruit!
