Blueberry Cream Cheese Pie

Ingredients

  • 1 Graham Cracker Pie Shell
  • 8 0z Cream Cheese
  • ¾ cup Powdered Sugar
  • 1 container Cool Whip
  • Ingredients for blueberry topping:
  • 3 cups Fresh Blueberries
  • 1/2 cup Brown Sugar
  • 3/4 cup Water
  • 2 tbsp. Cornstarch mixed with ¼ cup water
  • Zest of 1 Lime
  • 1 tsp. Orange Extract
  • 1 tsp. Cinnamon

Directions

Method for Topping:
  1. Combine all of the ingredients into a medium saucepan and cook
  2. for 10-15 minutes or until the mixture thickens.
  3. Cool completely.
Method for the Pie:
  1. Beat the cream cheese and powdered sugar together until smooth.
  2. Add half of the cool whip and beat until smooth.
  3. Using a spatula, fold in the rest of the cool whip.
  4. Pour mixture into the pie shell and top with the cooled blueberry
  5. topping.
  6. Refrigerate for 2 hours or overnight. Garnish with fresh fruit!
