Bacon and Spinach Quiche




  • 6 Eggs (slightly beaten with a fork)
  • 1 cup heavy cream
  • 1 onion (chopped)
  • 6 mushrooms (sliced)
  • 1 tbsp. unsalted butter
  • ½ cup bacon (cooked)
  • 1 cup cheddar cheese
  • 1 cup baby spinach
  • ½ tsp. salt
  • ½ tsp. ground black pepper



  1. Preheat oven to 350 F.
  2. In a small sauté pan, sauté onions and mushrooms in 1 tbsp. Olive Oil. Cool and set aside.
  3. In a medium mixing bowl, combine all other ingredients including the onions and mushrooms.
  4. Divide mixture into 4 greased and prepared 6×6 inch spring form pans.
  5. Bake for 30-35 minutes or until a knife comes out clean when inserted.
  6. Serve warm!
*This mixture can also be poured into 1-2 pie dishes OR
*This mixture can also be baked into muffin tins with a piece of ham as the lining. (note-the baking time will decrease if baked as muffins)
