Mother’s Day Breakfast Cupcake

Ingredients

 

  • 6 slices Bacon
  • 6 eggs
  • 3-6 slices Italian Bread
  • 6 slices Roasted Red Pepper
  • Onion/Chive Cream Cheese for spreading
  • 1/2 tsp. Salt
  • 1/8 tsp. Ground Black Pepper
  • Fresh Parsley

Directions

 

  1. Preheat oven to 350 F.
  2. Line a cupcake pan with bacon.
  3. Spread cream cheese on bread and then using a round cookie cutter, press 6 round pieces.
  4. Press into the bottom of the cupcakes, keeping the bacon on the sides.
  5. Place a slice of roasted red pepper in each cupcake.
  6. Carefully break the eggs into each cupcake.
  7. Sprinkle with salt and pepper.
  8. Bake for 20-25 minutes or until preferred doneness.
  9. Sprinkle with chopped parsley. Serve hot!
